About The Hollows
We are two young chefs dedicated to serving contemporary food focused on natural and seasonal products.
Our food is made with the best ingredients we can find in our area: cultivated plants grown from heirloom seeds, wild-harvested leaves and mushrooms, flowers, sap and roots, local fish — sustainably raised, pastured meat, poultry and eggs from small farmers.
Our dishes change and evolve with the seasons, and as we change and learn as cooks.
We brine, cure and smoke — as cooks have been doing for thousands of years — but we also embrace modern cooking techniques.
We’ve been cooking in Vancouver, San Francisco, Amsterdam and Spain; and we feel it is time to bring what we have learned to Saskatchewan, which is for us a land of opportunity.
